We’ve been enjoying playing around with the challenges of brewing high ABV hoppy beers lately and our fourth venture into TIPA territory sees a real emphasis on pushing that tropical fruit juice character to higher levels. The headline hops on this bill are Citra, HBC630 and Ekuanot with Palisade playing main support. We have been excited to use HBC 630 for the first time and this felt like the perfect opportunity. It brings juicy mango and pineapple, along with a touch of stone fruit and even sweet cherry which pairs perfectly with our peach forward Citra and some lime and papaya from the Ekuanot. Palisade balances this all out on the nose with a touch of grassiness to keep things interesting. This all plays out over a velvety smooth malt.
