Tomaat – Barrel-aged wild blonde ale with local tomatoes and herbs.
No store-bought yeast. Both Nevel and DESEM create their products with wild yeasts. Nevel brews traditional style wild ales with a modern twist. The result is a dry, refreshing and complex product. Beer that pairs exceptionally well with sourdough pizza.
The tomatoes come from a local grower, who was stuck with a suddenly overripe harvest when temperatures rose above 40 degrees Celcius last summer. Their taste was perfectly sweet, but they were no longer fit for transportation. When we heard about this, we drove there straight away and picked about 150kg tomatoes and put them in a barrel-aged beer. Together with Pizzacafe DESEM we added locally grown herbs to achieve the right balance for a sourdough pizza pairing.
Tomaat is an umami beer, full-bodied and rounded, with a nose that is reminiscent of our other beers Rust and Grondslag. The herbal blend of thyme, rosemary and basil is very delicately present in the background. Tomaat has low carbonisation, to allow the flavours of this beer to fully present themselves to you.
